Burnt Coat Oyster

8th generation Swan's Island fishermen and cousins Joshua and Jason Joyce began their quest for the perfectly brin y oyster.  Harvested from the high salinity waters of the Swan's Island Co-op lobster pound in Burnt Coat harbor Maine, these offshore jewels tease the senses and tempt the pallet of the most distinguished oyster connoisseur. These beautiful oysters have an intense brine and smooth finish, pairs well with a simple squeeze of lemon.

Heron Island

Rod Melanson and Colin Brannen started Heron Island Oyster Company in 2015, with a focus on small-scale, slow growing surface culture. Their lease is in a special spot on the Damariscotta River where the warm waters released from Great Salt Bay meet the cold ocean tides around Glidden Ledge. This unique location imparts their top grown oysters with nice thick shells and results in a briny oyster with a clean, sweet finish.
